When I go to Instagram for inspiration, I usually go to the same 6 accounts, and those 6 accounts happened to be female, almost all of them mothers and successful business Women. It is kind of a mix of famous and local, but this is my list, and my post.. lol
I do not know them, but on my perspective, I think we share the same values, the same hopes, and what I love the most about those accounts, is that they bring something positive to share.. and if you don’t believe me.. check for yourself:

A couple weekends ago, I took one of those crazy last minutes decisions.. To go on a GETAWAY with my girls and our KIDS!! I know people would say it is IMPOSSIBLE to really enjoy a trip like this, but being honest? I’m soo glad we did it!!
First impressions are the best, and as soon as we put a foot at the Semiahmoo Resort and SPA they welcomed us with FREE BEER!! and not any beer.. LOCAL beer! ( They know me well lol )
They have so many different activities for couples, families, etc. My favourite one was the s’mores around the beach bonfire at night! but we also enjoy their movie theatre, the pool, hot tub, and they not only have one but TWO award-winning golf courses!!
And now, let me talk about the AMAZING service I got at their SPA! I have no idea what type of massage I got, but the name of the girl was Melissa, and seriously, I haven’t had a massage like that in YEARS!! 100% recommended!!

Helloo All! I know I’ve been away, but with Francisco away I have not much time for the blog lately, BUT I wanted to share with you this RECIPE because the weather is perfect for it!
I started MEATLESS Monday’s years ago, and I want to continue the tradition for environmental and health purposes. ANYHOW, wherever your lifestyle diet is, this recipe is Family friendly and let’s face it.. is still winter here in Canada so soup is still on our menus.
*1 tbps avocado oil
*1 onion, chopped
*1 red pepper, chopped
*1 celery stick, chopped
*1/4 tsp chilli flakes
*300g Frozen sweetcorn
*800ml vegetable stock
*400 ml coconut milk
*1 rounded tsp smoked paprika
*2 spring onions, fresh coriander leaves and 1 lime to garnish
1-In a large pan with a lid, heat the oil over a medium heat. Add the onion, then add the red pepper, celery and chili flakes and cook for 3 min to soften.
2-Add the sweetcorn, vegetable stock and coconut milk, then increase the heat to high. Stir in the smoked paprika, then partially cover with a lid. Cook for 10 min. stirring every now and then.
3-Remove from the heat and season with sea salt. Ladle half the soup into a blender and whizz until smooth. Pour the smooth half back into the unblended soup and mix to combine. Garnish with the spring onions, lime, and coriander.

Love sharing this recipe with you, because is one of my favourite Indian dishes! When I tried this recipe for the first time at All Indian Sweets restaurant in Vancouver ( their vegetarian all you can eat buffet is a MUST ) I knew I can switch to a meatless diet if I can eat this every day lol! I think the reason why I love it so much, is because of the paneer! You know I’m a cheese lover, so obviously, this is a win-win for me!
I found this recipe at delicious magazine, and love it because is FULL of VEGGIES and the taste is soo similar and the best part? all the ingredients, including the paneer, can be found at Superstore! ( make sure to look for the paneer at the regular cheese section! ).
-1 1/2 tbsp ghee ( superstore in the organic section)
-1 chopped onion
-Teaspoon of coriander
-Teaspoon of ginger ( or 10g finely chopped )
-2 chopped garlic, cloves
-1 tbsp garam masala
-1/2 tbsp ground cumin
-300g paneer, cut into cubes
-3/4 tbsp natural greek yogurt
-Basmati rice, to serve
1- Heat the ghee in a frying pan over a low-medium heat. Add the onion and cook for 5-7 min. until soft and slightly golden. Blanch the spinach briefly in boiling water. Then drain. Put in a food processor with the coriander and pulse into a rough sauce.
2- Add the ginger and garlic to the onion and cook for 2-3 min until fragrant. Add the garam masala and cumin and cook for 1 min. stirring. Add the spinach mix and bubble for 10-12 min. Taste and season
3-Dry-Fry the paneer in a pan over medium heat for 30-60 sec until golden on both sides. Add the yogurt to the spinach mix and warm through, stirring. Season and serve with the paneer and basmati rice if you like.
